PREPARE THE DOUGH<\/h3>\n

1. Place all the dry ingredients into the mixer.
\n2. Mix on low speed for 4 minutes and high speed for 6 minutes.
\n3. Add in the butter and mixed fruits and mix for 1 minute. The final dough temperature should be approximately 28\u00b0C.
\n4. Place the whole dough on a lightly greased tray.
\n5. First fermentation: Cover the dough and rest for 20 minutes.[\/vc_column_text][vc_separator type=”transparent” up=”15″ down=”15″][vc_column_text]<\/p>\n

SHAPING<\/h3>\n

1. Flour the dough, divide equally into 60g balls each and place them on a lightly greased tray.
\n2. Final fermentation: Cover and proof the dough for 150 minutes at 32\u00b0C and 80% humidity. The dough will double in size at the end of fermentation.
\n3. Brush a layer of egg wash on the dough.
\n4. Mix the ingredients for the crosses and place into a piping bag, and pipe crosses over the buns.[\/vc_column_text][vc_separator type=”transparent” up=”15″ down=”15″][vc_column_text]<\/p>\n

FILLING<\/h3>\n

1. Starting with the matcha dough, divide it out into 7 balls (~34g per piece).
\n2. Taking 1 piece of dough at a time, flatten slightly into a disk and make an indent in the center. Fill with approximately 10g of the cooled matcha custard filling.
\n3. Pinch the corners of the dough together to form a tight seal, ensuring the filling does not leak out. Place the dough seam side down and gently roll to form a tight ball shape.
\n4. Repeat with the remaining 6 pieces of matcha dough.
\n5. For the plain brioche dough, divide it out into 10 balls (~34g per piece).
